Abalone BBQ Guide
Abalone is one of the most prized (and expensive) shellfish in Australia. Slice thinly (3-5mm) and grill over very high heat for seconds per side. The key is speed — abalone toughens rapidly with heat. Tenderise by pounding with a meat mallet first. Finish with butter, garlic, and a squeeze of lemon. Less is more.
