Easter BBQ Guide
Easter and lamb are inseparable in Australian culture. A butterflied leg of lamb on the BBQ is the classic Easter centrepiece — marinated in garlic, rosemary, lemon, and olive oil.
Timing: Butterflied leg: sear 5 min/side, then indirect 20-30 min to 57-63°C
Marinate overnight for maximum flavour. The varying thickness of a butterflied leg means everyone gets their preferred doneness. Serve with mint sauce and roasted vegetables.
