Flathead is a firm, white-fleshed Australian fish that holds up well on the grill. The fillets are thicker than John Dory so they're easier to handle. Brush with oil and season simply. Works well in fish tacos, on a roll, or served with chips and salad — the classic Australian fish and chips fish.
