Marron BBQ Guide
Marron is a Western Australian freshwater crayfish — the largest freshwater crayfish in the world. Halve lengthwise, remove the vein, and grill shell-side down. Baste with garlic butter. The sweet, firm flesh is similar to lobster. A genuine Australian luxury ingredient that's becoming more widely available.
