Teriyaki Glaze: 120ml soy sauce, 60ml mirin, 2 tbsp sake (or dry sherry)... Ready in 10 minutes. Pairs with Chicken, salmon, prawns, pork belly, vegetables.

Combine soy, mirin, sake, sugar, ginger, and garlic in a saucepan. Simmer 5 minutes. Stir in cornflour mixture and cook until thickened (1-2 minutes).
Prep time: 10 minutes
Chicken, salmon, prawns, pork belly, vegetables.
Apply as a glaze in the last 5-10 minutes of cooking — the sugar burns if applied too early. Reserve some for serving. The glaze should be thick enough to coat the back of a spoon.
